Easy Market Bruschetta Using Artisan Bread
A simple, delicious bruschetta made with locally baked bread from Great Harvest Bread. It’s a perfect way to enjoy fresh market foods with minimal prep, especially when tomatoes are at their peak in summer!
Rustic Herb & Tomato Bruschetta
Serves 6–8 as an appetizer | Ready in about 20 minutes
Ingredients
- 1 loaf artisan bread (we love Great Harvest Bread!)
- 4–5 ripe tomatoes, diced
- 2 garlic cloves, finely chopped
- About ¼ cup fresh basil leaves, torn
- 2–3 tbsp extra virgin olive oil, plus more for brushing the bread
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F.
- Slice the bread about ½ inch thick and arrange the slices on a baking sheet. Lightly brush them with olive oil.
- Toast for 5–7 minutes, until golden and crisp.
- While the bread toasts, combine the tomatoes, garlic, basil, olive oil, salt, and pepper in a bowl. Let the mixture sit for about 10 minutes so the flavors blend, then drain off any extra liquid.
- Spoon the tomato mixture generously onto each toast slice.
- Serve right away and enjoy!
